Under the entry for Chocolate & Cardamom in The Flavour Thesaurus, Niki Segnit has this to say:
'Like a puppeteer's black velvet curtain, dark chocolate is the perfect smooth background for cardamom to show off its colours. Use the cardamom in sufficient quantities and you can pick out its enigmatic citrus, eucalyptus and warm, woody-floral qualities...'
And I realised something shocking as those words made me 'Oh!' in surprised disbelief: I'd never tasted anything that combined chocolate and cardamom in it. Ever. So I set about making some chocolate and cardamom cookies...
